Easy Zuc Chips Anyone?!
Zucchini’s are in season and in abundance on the farm right now. They are high in antioxidants, supports your immune system and can improve eye health, digestion, and heart health and lower a person's blood sugar levels.
Here's a delicious ways to cook these beauties.
Easy Baked Zucchini Chips
- Crank oven to 220.
- Slice up 2 large Zucs into chips, then coat in flour.
- Coat in bread crumb mix of: 1 cup panko crumbs, 1/2 cup parmesan, 2 tsp Italian herbs, 1 tsp garlic powder and 1/2 tsp salt.
- Whisk up 2 eggs in a bowl, then dip Zucs in, then dip them in crumb mix covering them.
- Place them on to baking paper and spray with olive oil.
- Bake for 12-15 mins or until golden and crispy.
- Enjoy!
Tip: They are delicious with a garlic aioli, tzatziki or sweet chilli sauce! YUM!!
