Easy 4 Ingredient Cucumber Salad
Cucumbers are in season and in abundance on the farm right now. They increases hydration, strengthen bones, promote gut health, and help manage blood sugar and weight.
Here's a delicious salad, that's super easy!
- 2 to 3 tablespoons rice vinegar or apple cider, or or try another variety you like!
- 1 teaspoon honey (or sugar).
Then throw in:
- 1 large or 2 small Cucs thinly sliced, and
- 1/4 red onion thinly sliced.
Let sit for 10 minutes before serving.
- Enjoy!
Tip: Also pairs well with dill, or other herbs like chives, mint, parsley or basil! You can add crumbled feta, halved cherry toms or chilli! YUM!!
