Roast Dutch Carrots, Carrot Top Salsa Verde & Honey Macadamias

Beautiful dutch carrots deserve the respect of using both the tender and sweet root and the vibrant and fresh tops. Roasting them to perfection and then topping with this mint and carrot top salsa verde and a sprinkle of honey roasted macadamias will do just that. As noted in the recipe you could serve this as a side or add some pulses to toss through and make a salad for lunch or as an easy midweek dinner.
