Kale Pesto

Pesto isn’t exclusive to basil and can be enjoyed year round with a variety of different greens. The ratio in this recipe is a good guide to exploring more types of pesto based on what you have on hand. You could try parsley, broccoli, carrot top, or even wild nettle. Feel free to also interchange the nuts and experiment with different kinds such as; pecans, walnuts, almonds, and macadamias. This kale pesto is perfect with some fresh pasta and a good squeeze of lemon juice.

Had some spare kale from our garden and my wife gave me this recipe. Made it tonight but used half lemon-infused olive oil (before reading the note). It was amazing! I prefer this to basil pesto. Recipe ‘going straight to the pool room’.
