Looking for a way to use up your carrots?
Let your carrots shine and make a creamy carrot pasta sauce with them.
The COLOUR alone is reason enough to give this one a go!
STEP 1. Coat in olive oil Roast 5-6 carrots, 1 onion, 3-5 garlic gloves for 25-30 mins at 200 conventional or 200 fan forced.
STEP 2. Once cooled, blend till smooth with 1 can white beans, 1 can coconut milk or stock and 1 tablespoon of tahini or tomato paste.
Beautiful served on penne pasta, but you can also serve it over ravioli or gnocchi, and with red pepper flakes if you fancy.
