Don't Throw Away The Green Parts Of Your Leeks!

They are full of:
Flavour,
Vitamin C, and
Fibre!
 
First:
Remove a few centimetres of the usually woody upper part from the leaves.
 
Then:
  • Use in soups, sauces, stews, broth, or
  • Pickle them, or
  • Make them crispy and delicious by shallow frying strips, or
  • Blitz them to make a leek leaf pesto!
 
We are just scratching the surface here with ideas, there is so many ways to use this 'often thrown out' part of our leeks.
