Don't Throw Away The Green Parts Of Your Leeks!
First:
Remove a few centimetres of the usually woody upper part from the leaves.
Then:
- Use in soups, sauces, stews, broth, or
- Pickle them, or
- Make them crispy and delicious by shallow frying strips, or
- Blitz them to make a leek leaf pesto!
We are just scratching the surface here with ideas, there is so many ways to use this 'often thrown out' part of our leeks.
